Cardio blasting, lean work outs, and dancing are all great attributes to staying shape.  The most important is what you ingest into your system to keep it going.  Most people just eat whatever is on-hand and fast, and the more hungry you are the more you will tend to do just that.  Here is a fun recipe that is quick, tastes great and is good for you!

Sweet Whipped Potatoes

Prep: 10 min, Cook: 15 min.

  • 3/4 lb. sweet potatoes, peeled and cut into 1 inch pieces
  • 1/2 lb. baking potatoes, peeled and cut into 1 inch pieces
  • 1/4 cup cottage cheese
  • 1/4 cup evaporated skim milk
  • 1/4 tsp. salt (optional), or to taste
  • 1/8 tsp. pepper

Place potatoes in steamer basket over boiling water. Cover and steam about 15 minutes or until tender. Remove potatoes from pan. Transfer to a mixing bowl. While potatoes are cooking, place cottage cheese in a food processor or blender and process until smooth. Transfer cottage cheese and remaining ingredients to potatoes. Beat with an electric mixer at medium speed until mixture is smooth.
